
A few months ago, my husband came home from work with a guacamole recipe his coworker had enjoyed and asked me to make it for him. I purchased the ingredients the next week and it was great. Fast-forward a few weeks and we're craving some delicious guac, but all I have are avocados... many of the necessary fresh ingredients are just not around. Thus was born the chipotle guacamole. It includes pantry/fridge staples along with fresh avocado and onion to make one tasty companion for your meal -- or to be consumed entirely with tortilla chips.

How to make chipotle guacamole
Slice your avocado all the way around, height-wise. Peel the halves apart and remove the pit. Remove halves and dice. Or slice the avocado in the skin and then remove like this:

Place the avocado in a bowl and mash with a fork.
Next, dice up some red onion. Dicing your red onion is easiest when you cut it in half and slice in toward the hairy bit, then across.


Next, mince the chipotle peppers and add them along with the adobo sauce into the bowl. Add lime juice, salt, pepper and stir it all together!
Tips and Tricks
What to serve with
I recommend devouring it with chips before anyone else sees it. You could also serve it on top of grilled chicken, over broiled salmon, as part of a salad, burrito bowl, or on tacos.
Avocados
Make sure your avocados are ripe by pulling of the stem nubbin. If it removes easily it's ripe. Alternatively, gently press your avocado to find if it has just a bit of give and softness. Hard avocados won't mush.
Frozen avocados?
I want these to work. Once thawed they do mush beautifully, but they have an aftertaste of citric acid. I've experimented with adding a little sugar to offset the sourness, but I haven't perfected it yet. I'll keep you in the loop.
Onion
Can I use yellow onion? Absolutely! Sweet and white onions work too. Red onion just looks the prettiest.
Lime juice
Fresh lime juice is a perfect substitute for the bottled lime juice -- I just like that I always have the bottle on hand.
Salt
Sea salt, iodized salt, whatever you've got will work. I do like to take mine to the next level by using smoked sea salt.
The Recipe
Ingredients:
2 avocados, diced
1/4 cup red onion, diced
2-3 chipotle peppers in adobo, minced
2 tsp of the adobo sauce
2 tbsp lime juice
Salt and pepper to taste
- Mash the avocados until there are no large chunks
- Add all other ingredients and stir

Chipotle Guacamole
Ingredients
- 2 avocados diced
- 1/4 cup red onion diced
- 2-3 chipotle peppers in adobo minced
- 2 tsp adobo sauce
- 2 tbsp lime juice
- salt to taste
- pepper to taste
Instructions
- Mash the avocados until there are no large chunks.
- Add all other ingredients and stir.
