Not only is it a fun twist, but it takes loaded fries out of the appetizer corner and allows them to sit squarely in the dinner spotlight. We enjoy this easy meal any time we have pulled pork on hand.

How to make loaded sweet potato fries
This recipe for loaded sweet potato fries starts off with sweet potato fries. You can purchase of frozen sweet potato fries (hello, super easy dinner!), or make your own. If you choose to make your own, feel free to peel your potatoes if that's your preference. I like potato peels so I left them on.
Cut the potatoes into french fry shapes, then toss with oil, salt, and pepper. Cook the fries in an air fryer or double the time and cook them in the oven. Once the fries are cooked through, top with the barbecue pulled pork and cheese. Warm in the oven until the cheese has melted. Top with the cold toppings: sour cream, diced avocado, and pickled jalapeños.

Pulled Pork
There are a few ways to get the pulled pork needed for these loaded sweet potato fries. One of the simplest ways it to purchase ready made BBQ pulled pork. This ingredient means that no additional barbecue sauce is necessary. Another option is to use your favorite pulled pork recipe. I like to make this all-purpose pulled pork. Usually I have enough to make BBQ sandwiches, pork tacos, nachos, and then loaded sweet potato fries too. When I make these fries, I almost always have some of this pork already in the freezer or fridge waiting to be used up.
BBQ Sauce
There are a lot of barbecue sauce options available. You and your family likely have a favorite! I try to stay away from any sauce that contains corn syrup, though I know there are a lot of ingredients that might be good to avoid as well. If you aren't sure what sauce you want to use, Stubb's BBQ sauce is the go-to choice in our home.

The Recipe
Ingredients:
2 sweet potatoes
1 tbsp olive oil
1/2 tsp sea salt
1/4 tsp black pepper
1 cup pulled pork
2 tbsp barbecue sauce
1/4 cup shredded cheddar cheese
2 tbsp sour cream
1 small avocado
pickled jalapeño (optional)
- Cut sweet potatoes into thick, french fry strips.
- Toss potatoes with oil, salt, and pepper.
- Cook in 400 degree air fryer for 10 minutes, shake, then cook for another 4 minutes.
- While sweet potatoes cook, coat pulled pork with barbecue sauce.
- Create two stacks of fries, top each with half of pork and cheese, then place in 400 degree oven for 2 minutes or until cheese melts.
- Add sour cream, avocado, and pickled jalapeños if desired.
